Fake-it French Bread

  • egg
  • milk
  • sugar
  • spices: cinnamon, ginger, nutmeg, ground cloves
For one serving, beat/whisk one egg in a microwave safe bowl.
Add 2 oz of milk and whisk some more.
Add a teaspoon or half tablespoon of sugar. Whisk.
Add two shakes each of cinnamon and ginger, plus one shake each of nutmeg and ground cloves. Whisk the heck out of it.
Toast two pieces of bread. Cut into small bits and add to egg/milk mixture.
Gently stir/fold until bread soaks up the mixture.
Microwave until firm. In mine, this takes about 2.5 minutes.

Cranberry-pineapple-orange gelatin

  • 1 package cranberries, washed and frozen (makes them easier to grind)
  • 1 cup sugar
  • 1.5 Tbsp plain gelatin (two packets)
  • juice from 1 freshly squeezed orange (cheat: 1/2 cup of orange juice with pulp)
  • 1 small can crushed pineapple, with the juice
  • 1 cup chopped pecans (might try it with walnuts!)
Grind the cranberries. Place in your dish or mold. Add the sugar and let stand for an hour.Meanwhile, dissolve the gelatin in 1/2 cup water and add the juice from the orange. Heat on low; do not let it boil.Combine all ingredients in dish or mold.Put in refrigerator to set overnight.
